Thanks, ladies for the kind words of encouragement and prayers about my eye. Left eye is about 98% blind, so it was a greater concern about the right eye optic nerve swelling up. No medicinal knowledge on why or what causes the optic nerve to swell up. Thanks to the One above, I can still see and function almost normal. Not driving because the depth perception is off yet.

HyVee stores here had chicken hindquarters on sale, ten pounds for $3.90, so I bought 4 sacks of ten pounds each yesterday and they are in pans cooking on the stove. Then I will de-bone and put half a quart of chicken and the rest broth and process in the pressure cooker for 90 minutes at ten pounds. Each jar will make the right amount for dh to have chicken and noodles that he loves so much. That was 40 pounds of meat for $16.00. Love bargains like this.

The new thread is off and running hard, Honchey. These new riders are really showing us beautiful work, so well done, I am in awe of their work. I am feeling the challenge to do my very best with every block. Seems we can all learn new things from each other on this journey. JanRN, I like your folder idea, which I use as I put together each block. It organizes me better and I can clean up easier afterwards.

Hillbilly CAST IRON Cooking


1 tsp. salt
1/2 tsp. onion powder
1 clove garlic minced
1tsp. Worcestershire sauce
1tbsp. oil
1 1/2 cup thinly sliced onion
2tbsp. all-purpose flour
1 cup beef broth
1/2tsp. salt
In a large bowl, mix together the ground beef, egg, bread crumbs, pepper, salt, onion powder, garlic, and Worcestershire sauce. Form into thick patties.
Heat the oil in a large skillet over medium heat. Fry the patties and onion in the oil until patties are nicely browned. Remove the beef patties to a plate, and keep warm.
Sprinkle flour over the onions and drippings in the skillet. Stir in flour with a fork, scraping bits of beef off of the bottom as you stir. Gradually mix in the beef broth. Season with seasoned salt. Simmer and stir over medium-low heat for about 5 minutes, until the gravy thickens. Turn heat to low, return patties to the gravy, cover, and simmer for another 15 minutes. Serve with a big bowl of mashed potatoes

Yes Nina, I agree with you..I love the way Rosy & Givio use color in their blocks.. Makes me want to do another set of blocks at the same time.. I'm finding them rather easy with the exception of the tiny pieced blocks..not hard to do it's just the bulky seams that drive me crazy..

I'm salivating looking at the plate below this post!!!!!

OMG QNS, that is my style of cooking sometimes, oh lord I just love gravy.....what are chicken hindquarters? I am cooking chicken tonight.....

Sue I have fixed "Hamburger steak & gravy" all my life. The only exception is instead of using beef broth I usually use instant milk. My DGM called it cream gravy.
My DNiece finally came today to sew. She has really got outta practice! I did talk to her about this being a class & how she has to come regularly & has to do her homework. What she sewed today wasn't the 1/4" that she was sewing even 3 months ago. I hope she will do her homework. I sent her some scraps to practice on. We will work on getting her borders on her layer cake quilt next week.

Rosy, the chicken hind quarters are the legs and thighs...dark meat. That is what my dh likes to eat. He is baby sitting the Presser Canner on the last batch to run tonight. Had 21 quarts of chicken and broth. He loves chicken and noodles year around...so I am stocking up the pantry for him this winter. We love simple homemade meals more than anything else. We are both 73 and retired in North Central Missouri...just over the Iowa border...by eight miles. My left eye is blind because an Optic Nerve blowout in 1999...so it was a major concern when the right eye Optic Nerve swelled up. But the Good Lord seen me through it and now it sees 90% of what it should.

Today is a new day for all to enjoy. May it be a good one for you and yours.

QNS - do you make your own noodles for your chicken & noodles? I remember going to my grandmother's house and seeing the noodles draped over the back of the kitchen chairs to dry. Funny what you remember from when you were a child! She made wonderful chicken and noodles!

No, JeanieG, that is toooo much work. There is one brand I buy with 'extra thick' noodles that is almost as good...in fact I am constantly buying all the store carries to keep up with dh! They cook in the broth in about 15 minutes. Jeanie, how do you label the individual pictures in Picaso? Figures out how to do the albums, not the naming of each picture.

Rosy, your site wants me to register and create a pass word, is this normal way they do it?
