Use some painter's tape wrapped sticky side out around your hand and pat the quilt in progress.. it will pick up the hair and not damage your quilt. You may have to change tape often depending on the amount of fur..

I keep a pet lint roller right near my table and use it regularly before ironing or sewing. They work great and then you won't have to remove the cat (smile). We all love our fur babies so we must accommodate where we can.
