I've seen several different patterns. Some call for a single layer of fleece and some call for a double layer. Also, should the pockets be a double or single layer. I'm trying to figure out the best way to do this. Warmth wise I think the single layer would be fine but I'm wondering if the double layer would have more stability since you're adding pockets. Suggestions?

if it is fleece, i think the single layer would be plenty warm and sturdy. i've made them out of knits and was sure to make the tension tight.

I don't know, but I just made one of those tied quilts from a double layer of fleece this morning. It's really bulky and I would suggest one layer of good quality fleece. I would try to stretch a little bit when you sew so the seams won't pop when you put your hands in the pockets and stress the seams. Show us your finished scarf.

I have made these...
A single layer is plenty warm...but, make sure that you double stitch the pockets. They have a tendancy to pop.

I was planning to make those same scarves. I was thinking maybe the top edge of the pocket needed something behind it so it wouldn't stretch. Did anyone else feel this need?

I thought that too. Seems flimsy with all the wear. I was thinking about turning down a small seam?

I have made fleece on one side and fabric on the other and sewn a hidden pocket. (hid the zipper by making a flap to cover it) I made a few for friends going to NY they've used the scarves instead of purses and they love them!!!!
