Another excellent source, and just fun to read, is the book "Putting Food By". It will tell you WHY you have to do things a certain way and teach you what can happen when you don't follow the directions.

You can also get your pressure canner tested to see if the gauge is what it should be. Our Extension Educator can do this for us in this county.

Use the Ball Canning Book and google whatever veg you are going to can got different ideas.

Ball Blue book is the one I use. It used to cost $1, but much higher now. I've been canning for over 40 years, (can I really be that old). I still refer to the Ball Blue book. I use the pressure canner and water bath depending on what I'm preserving. DH is out buying our third freezer as we "speak". And there are only two of us.

Same here, but Kerr also makes a canning book. I have both and sometimes one will have what the other doesn't. Have fun with it!

i agree, the Ball canning book is great. it also has some recipes for lots of different things
