Sounds like what I had tonight except leave off the shredded cheese and chili. It was good. Luckily my husband worked late night! He had scallops and shrimp over linguini. Now that sounds really good.

Pork enchiladas and a salad. Then we are going to attempt some homemade granola bars for dessert.

Yum yum ... these meals sound wonderful. If someone says they want pork chops or steak or meat loaf, I can fix that. It's the "thinking it up" that is the hardest part of cooking.

oh man, I had the best dinner ever tonight!! I went to my DD's and let her cook.. Anything cooked and served up by someone besides me is wonderful.. kidding aside, she is a good cook.. We had meatloaf with red or green tomato relish on the side, sugar snap peas, a california blend, and JOJo potatoes.. I had never had JOJO potatoes, they were yummy.. Potato wedges, rolled in something that was very crunchy and tasty.. and then baked in the oven.. I am going to have to get that recipe. She also had nice refreshing glasses of ice tea.. Then to make the evening just perfect her hubby cleaned up while I played with the grandbabies.. ahh.. it was sort of like heaven I think.

Easy homemade chili...yum!
Want the recipe?
Brown 1 lb of ground beef, then drain off any fat
Add: 1 large can of crushed tomatoes
2 small cans of pinto beans, undrained
2 small cans of red kidney beans, drained
1 package of Taco Bell taco seasoning mix
Stir all together, let simmer for about 10 minutes or until all the ingredients are heated through.
Enjoy!
