My son also has celiac disease and I try to make something for him for family gatherings. When I do pie crusts I roll them out between 2 sheets of Saran type wrap with some of the gluten-free flour dusted on the bottom sheet and then on the top of the dough. After taking the top sheet off, I pick up the crust still on the bottom sheet and flip it into the pie pan. Sometimes I have to finger press it in places to make it fit the pan. He really doesn't care about the looks, as long as it tastes good! Hope this helps. I also have a recipe for GF pecan tassies (tarts) and I have used the crust mix for this as a pie crust.
