Welcome from a Canadian in Minnesota! To answer your question, I usually start adding borders to lengthen a quilt. Perhaps a 2.5" border on the sides with a 5" border on the ends. Then a very narrow border all the way around, then another 2.5" on the sides with 5" on the ends to keep the symmetry. Post a photo - we'd love to see it.
A fabric stash is always missing that one fabric needed to finish the quilt on which you're working.
