Hi and welcome. Both of your quilts are great!

I have a quilt room with a pitched ceiling over the garage too. It is hard to organize because of the loss of wall space. I use stackable shelf units and fit them in every where I can.

Thanks for the comp. - Do you have any pics of your sewing room? With the dimensions, it SHOULD be large enough, but it is NOT! How far does your "ceiling" come down?
