Hello! Welcome from Idaho! Becuase of the thickness involved, I would not get too fancy with the quilting. Depending on the batting you choose, I don't think I would do every ditch, just decide which seams you want to quilt next to and have fun. Just my opinion.

I made a quilt like yours. I free motioned quilted it- stippling. I thought it came out well. I statrted in the middle doing one block at a time.

I agree with the suggestion to stipple, it is something that has a lot of forgiveness, but it would be helpful to practice a little so that you get the hang of it.
Another option, take the top into your local quilt store and ask them for suggestions.
