If you want all your squares to match, find the smallest one, and trim the others up to that size.
As for quilting, you can do whatever you like. Most beginners find that in the ditch is the easiest, because you have a line to follow. However, meandering means that you just go where you like and don't follow any lines.

I am not too far from you. Do you go to the quilt shop in St. Catharines - Kindred Spirits?
The most important thing to remember is the quilt the whole quilt evenly, meaning the same denisity all over.

Stippling is free motion quilinting that looks like puzzle pieces almost. You build a nice even rythym.
