I promise not to buy any more fabric until I see something I really like. Or it's on sale. Or I think it might match something.
It is very easy, however, when you are done, the entire outer edge is on the bias. Use lots of starch! I made one this way and it was difficult to work with. Here is a link to my comparison of this and the triangle method:

I have a chevron quilt in my near future and have been looking for different methods. Thanks for posting this!
I took a workshop making this quilt by strip piecing. We fused the back of the outside edges about 4" wide with lightweight stabilizer. (I use Misty Fuse) before cutting the edges straight. No stretch at all. This is why I take workshops even for patterns that seem so simple. I usually have an ahhh ha moment of so that's why the display quilt looks so nice.
