I picked up a kit for a table runner. I have never done a project with anything other than a 2 1/2" double folded binding. This kit calls for 2" binding. It doesn't say much about application. So, do I use the same technique for a 2" binding as a 2 1/2" and just reduce the seam allowance?

Not sure of what you mean by "reduce the seam allowance". I make all seams, even for binding 1/4". 2" will just give you a bit narrower binding. I usually do 2 1/4" for my binding strips, then fold in half.

I have found 2" binding to be my prefered width to work with. I double fold it and sew on the right side of the quilt with a 1/4" seam. When I fold it over and hand stitch it to the back, it just barely covers the front stitches. Each side of the binding is an even width and it all just seems to go on easiest with that starting width.

yes, just trim the top and batting even. fold over binding tightly and it should work the same as 2 1/2 inch. just looks skinnier which some prefer.

Some smaller projects use a narrower binding.
I use 2" binding a lot, handle it the same as 2 1/2" :D:D:D

Personally I hate that scant binding....but I know our care quilt committee does it too, and they expect you to stitch a scant 1/4" seam when you attach it.

Yes, I too have found several different patterns that call for different size binding, I just trim the project closer and bind the same way.

It depends on the total thickness of your fabric and batting. But treat it as you do for 2 1/2".
