Yup, quilt as you go is just what you are looking for. There are books on the subject too. Maybe you can find one at your local library, or they could get a copy for you on inter-library loan. Also check out Amazon.com for used books. You may find a good book there are a very reasonable price.

The sales lady in the Viking store inside JoAnne's is making a Christmas log cabin quilt as you go. Very nice.

My first was Grandmothers Fan, from Georgia Bonsteel book Lap Quilting. You just have to leave a little space at the edges free of quilting so they can be sewed together.
