I make my own templates out of heavy cardstock and a protractor...so I can iron on them. After cutting out the circle, I use the largest stitch on my machine and stitch around the outside, back stitching at one end...then lay the template on the circle, pull the thread and the edges pull tight around the template so you can iron a nice sharp edge.

[quote=CoriAmD]I use a circle template to trace onto interfacing, then sew this (right sides together) to the fabric I want for the center. Trim around with pinking shears to about 1/8" .. Cut small slit in interfacing and turn. Press well. ]
Ditto to this post. I also sometimes save used dryer sheets instead of interfacing. I use this method for Dresden centers and for Buggy Wheels, too. For Buggy Wheels centers I make a 4 patch first then cut my circle from that so it has 4 pie shaped pieces for a more scrappy look.

I attach them by machine sewing them on before pulling the threads.

I too use the used dryer sheet method for doing circles and simple shapes. I machine stitch the shape, trim with my pinking sheers, cut a slit in the dryer sheet, turn right side out and press with the iron.
