I am finishing a very large block dresden plate quilt and my question is for the center do you use white, or can it maybe a pretty complimentary pastel?

You can use whatever color you like the best.
Some use yellow, it is up to you, no rules.

on one i made i used a complementary color- brown in the center of shades of yellow- for a sunflower look
Or a large print with a really interesting element in the center of the circle that coordinates with the colors in the wedges.
I arise in the morning torn between a desire to improve the world and a desire to enjoy the world. This makes it hard to plan the day.
I like the centers to be solid color, but there is no rule that says it has to be white.
My DH refuses to eat off any china that has patterns in the middle. He says that he doesn't want to find "surprises" as he finishes his meal. lol

Whatever color you like will be perfect. If you use white, you will probably need to line it or you might have some see-through around edge.
