I've felt this way. One piece especially I drooled over for years and kept putting back into the stash. Then, the perfect pattern came along to highlight the fabric. I cut and made it and am so very, very happy with it. Don't fret about being afraid to cut your favorite. When the right pattern comes along, you will know. Then, you can enjoy it forever as you use or display it.

My problem now is that my BFF says it's her favorite among all the quilts I have made. May have to knuckle under and give it to her one of these days.

Another option is to simply make a whole cloth quilt with your cherished fabric. Put on a border if you like and have the whole piece quilted. Voila! You don't HAVE to cut up your fabric.

Why not quilt the whole fabric, add a contrasting border, problem solved.

    >>I really like the pattern that Leslie333 posted. I just hate to pay $9.50 for it.<<
I'm with vondae here. It's a nice pattern and all, but way too expensive for something so easy to figure out. The sale page says it uses 2.5, 3.5 and 4.5" strips, but I only see 2.5 and 4.5" strips.

Try doing a Nancy Zieman column quilt to show off the fabric or really big squares surrounded with sashing, to effectively show off the fabric. You may be happy with those results.
