The only thing you need to be careful of is if it's been cut on the bias. They are a bit hard to handle if you are sewing two long bias pieces of 2 1/2" strips together.

Any scrappy block like the square in a square (I'm thinking the 9 patch one with a square in the middle and a contrasting fabric in the rest of the spaces). Chinese coins. 9 patch (either the 5/4 configuration) or all scrappy. A scrappy samples with lots of different blocks. Cut in longer strips for a jelly roll race like quilt. Any string quilt. I've used the one like Franc36 mentioned (diagonally on 10" squares), and I used phone book pages for the foundation.

I too sew it together for colorful binding, but I also use a lot of it for Foundation paper piecing.

Maple leaf is really nice.
I usually am able to calculate my binding for what I need so the small strips are thrown into my doggie bag bedding.

I love this and just made one. This uses 2 1/2 inch strips.
