I have always used flannel for all 3 layers. I cut all pieces the same size - it makes more to rag and is easier to cut and sew that way.

Hi Andrea - I just made my first quilt - a rag quilt - for my grandson - can't wait to give it to him. I used 8" blocks and used denim and two layers of flannel. It turned out great. I did 1/2" seams and snipped all the seams about 1/4" in and 1/4" apart. I loved making it and have about 12 pair of jeans cut up for another one for my granddaughter. I will use my girly backs on it. I also did the X on the blocks. I'm going to try enclosing pics but I just started posting on this board this week - been lurking her for a couple months. Please send pics when you finish.
