Future Quilt - How best to store pieces

I am in the process of making baby quilts for my first two grandchildren (both boys), the first due in August and the second due in September. I am giving my DD and my DDIL matching quilts for the boys. I started these before knowing the genders and will also be making each of them a quilt to go with their nursery theme with their names, birthdates, etc. embroidered on them, but have a question on these first quilts. While sewing together the blocks for the second quilt, I was thinking that I should see if I had enough fabric left to make a third quilt to be given to my youngest son whenever he and his future wife would be expecting their first baby and that way all three of my children would have matching first quilts for their babies. Luckily I do have enough fabric and in fact, have enough for a fourth quilt that will be a charity quilt. So, my question is, do I just pack away the squares that I have cut, do I piece the pinwheel blocks, do I piece the whole top or do I finish the whole quilt and store it away until youngest is married and has his first baby on the way? What would you all recommend as the safest way to keep this future quilt?

If you're in the "sewing zone" and the fabric is all out and getting cut anyway, then just knock them all out now.
That's what I would do.
If gender/color isn't an issue, at least get all the tops done.
You can always quilt the 3rd one later.
In a perfect world, rolled would be the best for storage.
But if you gently fold it, without a lot of weight on top, out of sunlight and dust, it will be fine for years.

Do it now while you are in the mood. Sometimes I have saved fabrics for a specific project, and later decided I didn't want to to another one. Like MTS said, at least built the top. When the time comes, you are practically finished.
