I call it stealing moments. I work full time, but as a teacher, so there are many vacations to spend sewing. My days start at 5:20 am to do barn chores, then prepare for school. If there's 10 extra min in the morning, I can accomplish something. We're empty nesters, too, so if I have energy after teaching 24 10-11 year olds, and doing more chores when I get home, and if I don't have school work, I will quilt. As others have said, bits of time really add up. It takes me a long time to make a quilt.

I work full time also. Sewing during the week does not work very well for me. Sunday is my day to sew, sometimes Saturday afternoon. I am to tired when I get home from work. All I want to do is eat supper and relax. Some nights I will do a little sewing but not much. The creative part of quilting gets my brain going on overdrive and I can not fall asleep. Sleep is a hard thing to come by for me, so I try not to do things at night that get me going. I have 6 more years till I can retire then look out sewing machine here I come.

Even though, as I commented earlier in this post, I have more time now with the kids gone and a sewing room I can leave set up, I still don't achieve a great deal quantity wise.
I am a slow worker - the type that looks at fifty other fabrics/patterns when I have already chosen one, just to make sure it is THE ONE.
I may work on 2 or 3 things at once and have others in my head planning - but I don't start working on another until I have quilted and bound at least one of the current ones.
I always say I am slow but steady!
