I've made a couple of different quilts with 2-1/2"....

Browse through the videos by Missouri Star Quilt Co. She has numerous patterns that use strips.

You could make a basket weave - rail fence - strip quilt, lots of patterns for those strips.

Don- I am currently using 2.5" strips to make a QAG, I made one on the diagonal and now I am working on a rail fence idea that may or may not work as planned, but because it is my favorite colors, and for me, I will love it either way. I am working on squares that are 12.5".
