My DD, who has never really sewn, is finishing up a QuiltSmart Double Wedding Ring for a friend. It's gone together very quickly and easily-I highly recommend it!

Check youtube. Kaye Wood has a tutorial on 5, 6, and 8 pointed stars. She also has all the tools available from her site that makes it easy to make stars with as many points as you wish. (Looks easy enough for me to be able to use.)

I made my stars with the strip method.. they were easy.I have used different width strips for different size stars and cut and assembled pieces like the person on sand and sunshine blog. I don't remember where I got the information many years ago but they are quite easy.. maybe EB. I watched the sewing programs on PBS and recorded them Also you can use less or more strips. I have some with 5 strips, some with more, 7, 9, etc.
You can use a different angle to cut the strips and make 6 point stars.
I have a 40 degree and 60 degree small diamond templates. but I use the degrees marks on my rulers to cut the diamonds usually.

I did one early in my quilting 'career' before I knew it was supposed to be difficult! Got a book from the library. Did a strip-piecing method and had no issues really. The strips do have a tendency to get a bit wonky when cutting the 60 deg. diamonds but a few straightening cuts along the way and it's easy-peasy. Wish I could remember the name of the book for you. It was excellent.

I love these quilts. I am not talented enough to do one so....I went to Rapid City to visit my oldest son and bought one at a Pawn Shop. It was made by a woman from the Pine Ridge Indian Reservation and I love it.
