I have a book called Cat's Meow that has a pieced cat pattern. My sister actually had her 2 grandaugnters make blocks when they were very young. It became a real family project when I had to put all the blocks together. I have a copy for sale if you are interested.

This is a pieced one that looks comparatively easy to do.
