Potato Chip, named because you can't make just one! I think I would downsize the inner block for the twin from 8.5" to an inch or so smaller depending on how large the print is you select for that block.

A jelly roll quilt is really fast if you need it. I made one in a day. They use a jelly roll obviously. We did it at our quilt shop as a race. I found that the ones made with bali pops looked the best. If you search you tube for jelly roll race you can see a how to video. Basically you sew all your strips together to make one huge long strip, bring the ends together then cut the seam and keep repeating that until you get to the end, then you square your quilt because the ends will be ragged and jagged but you dont lose much of your quilted material if you take your time. Then we put 2 boarders around it and ended up with a nice lap quilt. You need at least 40 strips and if you really get energetic you can cut up your own strips from your stash. They need to be 2 1/2" by 42-44". My Dd saw it and loved it and asked me to give it to her. I was shocked because she had never really shown any interest in any of the quilts I had done before.
