I don't think so since HST are based on 45 degree angle. To have 6 pointed star, you need to deal with 60 degree angle to total 360 degrees. Don't feel bad, I had to think about it for a few moments.

If you are talking about a 6 pointed star with "rays" that are perfectly symmetrical and even all around, then no you can't. HST are / result in star rays that are/have 45 degree angles....a perfect 6 pointed star requires a 60 degree angles.
If you are talking about a Star of David - then yes you can use them as the points of the star - but you need a hexagon in the middle and triangle pieces to complete the block.
If you are looking for an easier 6 pointed star....have you checked out paper piecing?? There are some great ones that go from very simple to very complex. Maybe Google "paper pieced 6 point star quilt blocks"
Hope this was of some help.
