Edited: Actually they are 10,5"
I was thinking 3 to end with a 2.5" sashing but do you think I could use 3.5?

It depends on the size of the pieces in the block, the size of the quilt... I would audition some different widths to see what your eye likes :D:D:D

My last one with 10 inch blocks (10 1/2 before stitching) was sashed with strips cut to 2 1/2, so they ended up 2 inches wide. It was perfect.
