I just started quilting again after a long break. Would you mind double checking that I am planning enough fabric please? I am unexpectedly going to be near a quilt shop tomorrow. It's too far to go back to if I don't buy enough. I am scrambling to make a shopping list.

These are my rough plans, dependent on what fabrics I find that I like.
Double/Full size quilts for all. Blanket style, estimating 80"x90". No backings included in the estimates as I will purchase them later.

-Dresden plate. 10"(just the plate, not the background) estimating 42 plates. 20 fabrics. 3.5yards combined.
-Sampler quilt, haven't picked the squares yet. 12" blocks, estimating 16-20blocks. No borders intended or just a minor one. Planning two colors and a neutral. 2.5yds each possibly 3yds, to be safe, for a total of 7.5-9yds
-Single Irish chain 6"blocks maybe. 3yds light, 1.5yards dark. I found this estimate on the web, seems really low doesn't it?

pretty hard to estimate with the givens. I would think you would want 1/4yd @color for Dresden plates, you need a center color also. Sampler-you will need a lot more than 2 colors & cream to make interesting blocks. Irish chain-that is 4 1/2 yd for the top. seems low as there are so many seams in it.
you would be better to take more time to figure or just get the scattered colors for the plates & work on the rest later. haste makes waste. unless you can just buy yards of each color you like ! good luck! & welcome back to quilting !

Welcome to the board. You will always get answers to questions here.
I'm sure others will comment on your question also but it seems you have your estimates about right if I understand your plans for each quilt. For the Dresden plate are you getting FQ's or 1/4 yd pieces of 20 fabrics--that should be plenty if you are doing them scrappy. For the Irish Chain, the light always takes more than the darker chain. For the sampler,a good rule of thumb is to calculate the total yardage and divide the number of different fabrics by that and get a little more of each fabric depending on how complicated each block will be, more seams take up more fabric.
