Anyway it's seems I did it WRONG. I had the fabric folded into 4s (selvage to selvage and then one more time)

I got V bias instead of straight bias... will try to post picture later...but I'm sure you understand.

Can this be saved - (can I cut it somehow and sew it? I don't think so)

or do I NEED to go out shopping for red with gold fabric (like I really wanted to put on a small tabletopper)?

Have that drink immediately!! Can you "save" it by just cutting it narrower? If it's cut 3" wide take it down to 1 1/2" maybe? If it's already narrow I'd just have another drink after I went shopping for more. Sorry-I'm not much help LOL.

Talked myself right into cutting the fabric - yah know - Just do it - get this UFO done - get ahead of the Christmas schedule.

If I had not talked myself into it I probably would have checked a book or two! Urghhhhh

Please post a picture so we can see...just about everything can be saved and I'm sure this can be too but I'm visual in nature and would need to see what you mean by V.

Is it possible to cut out the V section and just sew on the straight cut of the next piece making it longer but still able to go around the project?

If you don't mind a few seams in your binding, it can be saved:

A) this is what you have

B) if you cut it apart, it will look like this:

C) You can recut one end and sew it back together on a diagonal (actually - it will be on the straight of grain!)

The fabric looks like it would hide seams well.

if your intent was to use a miter seam to make a straight strip of binding you can correct it. Cut off or "unsew" the seam you made. To miter for a straight strip, you need to set the fabrics at a 45 degree angle before you sew them then sew them together with an angled seam. I put one piece on the surface, right side up so that it's parallel to the edge of the table. Put the second piece right side down at a 45 degree angle so that the ends of the two are overlapping...make an "L" with the two strips, right sides together). The part where the strips overlap is a square you'll sew diagonally across that to make your miter. If you've laid them out as I've described, you can then stitch from upper left to lower right on that square...but before you stitch, put in a pin and open the two strips to make sure it's the way you want it to go. I mark my stitch line with a pencil since it's on the bias and can be stretched out of shape. Hope that makes sense.
