I agree with Joy. Rail Fence Quilt is very easy and looks complicated. (also Basketweave is an easy one.)

That sounds interesting, what is that pattern?

For a super easy quilt I make the "5 and Dime" by All Washed Up quilt company.

I am late with this post, but I would do the rail fence. an easy peasy lock to do and goes together quickly too.

I'm also probably a little too late to respond, but I have been looking back over the Block of the Month list, and there are some really easy blocks mixed in with some that are a little more challenging. It might be a good place to take a look for something quick and easy.
