Went to a quilting class and the instructor said I couldn't quilt a quilt with my machine. I have a viking daisy. What kind of machine is good for this job?

Any machine that has enough room to cram half of the quilt under the arm and has enough power to sew through the layers will work.

I quilted many king sized quilts on a small Janome (5inch harp) . I call hijinx on your instructor.

I think your instructor did you a disservice. Sure you can quilt on your machine. (I sort of wonder if she sells machines and was going to aim you towards one of hers?)
