What Do You Call It....
 
...when you don't do a binding on a quilt, but just fold it over the back? Usually used for art quilts?

And, does anyone know of any good video's that demonstrate this technique?

It is called " facing" a quilt or art piece. I think Ricky Tims from thequiltshow did a demo but I don't know if it is on YouTube.

There is also a technique called a "knife edge" finish that is often used on art quilts and can be found on many antique quilts. Here is a tute I found on the technique but there are other ways to do it besides what is presented here:

Edited to add, if you do choose the knife edge be very cautious if attempting it using the pillowcase or birthing method as it is very easy to get pleats, gathers or puckers in your quilting. Here is an example of a piece I did using the birthing method and I did get pleats and some fullness in areas when quilting (which are quite obvious in the close up picture). As it is a small piece and utilitarian I didn't care but it is most definitely not suitable for show and would detract from a nice art piece. http://www.quiltingboard.com/picture...s-t280296.html

I used this method to face a queen sized quilt. Very straightforward directions.
