What about a really nice bottle of wine and glasses to go with it. You can all enjoy it together. You could make the criss cross wine glass coasters to go with it. Bethany Reynolds has a great set on her web page done like OBW coasters.

I have done this at work for co-workers that were ill or having babies. My co-workers don't sew, so they evenly split the cost of the materials and I made the quilts. They loved the idea and the recipients loved the quilts. We considered it a win win situation.

If you think they want to do more ,I like the thought of having others add "accessories" to the quilt - like the wine and glasses , candles, maybe some DVDs ?
Mention the quilt to your friends, you might be surprised how they respond- they might have wanted to approach you about it but have been afraid since they don't want you to think you are doing all the work and they are just adding their names
