I would suggest Deb Tucker's Hunter Star pattern....It can be made with two, three or 4 colors - and the layout has multiple possibilities...Check out her website, for Studio 180 Designs and watch her video for this design......I think you will really like it....

pieceandquilt.com has some very cute blocks in their "Thirty Blocks in Thirty Days" section. Many are done in three colors.

There is a pattern called Three one yard quilt pattern..not sure who it is designed by..
