I use neutral also. I always go with looks best on top.
My thread is 100% cotton. Most of it is from Connecting Threads and Threadart. When piecing I use a neutral thread that blends with most of the fabrics in the quilt. Cream, white, gray, blue-gray. It just depends on the fabric. When quilting I match to the fabric on top.
I love variegated threads..
I match the bobbin to the backing and the thread to the top.. :D but I'm crazy like that. Usually the two are similar so any pull thru isn't obvious.
if the quilt is various shades of the same color, i go with a color. otherwise, i choose a neutral
I tend to stick with black or white for piecing and match color of thread to quilt when quilting
Just depends on the project and if I want it to blend or stand out.

I'm a sucker for variegated also! I use that and cream mostly.
