I know this may not matter, but I want to know what I have.

I have just started quilting - one quilt and a few other small projects. I have leftovers from these projects.

I have some fabric people have gifted me with and some I have bought - not really part of a project.

I also have the fabric for a few quilts and a few other projects - projects I am planning - since I haven't started these, are they UFOs?

Is the fabric a stash if it is to be used in a project?

It's UFO when it's started to be something definite -

It's "stash" when it hasn't been committed to a project.

UFO's are quilts that have been started but aren't finished.
A stash is a variety of fabrics that you collect so that you have some to work with when you get an idea for a quilt.
Hope this helps :D

Someone said that there is another category: PIGs -- project still in grocery sack!

I consider something a UFO if I haven't worked on it consistently for a month. I consider it stash if the fabric has no obligations to a project. :)

These could be considered PIGs if you have the fabric and pattern in a bag.
