No, I have no trouble with it. I simply make the fleece backing large enough to fold the backing to the front and to make a "self-binding". I do often cut off a triangle from the corners to reduce the bulk a little and I also stitch the corners when I'm stitching the binding down. I find a large zigzag or a "connecting" stitch works really well for sewing down the binding. Looks nice too.
I use a little basting spray to anchor the fleece to the top. I do not use any batting when I use fleece. It does not take a whole lot of quilting, either, because the fleece tends to "stick" to the top on its own. On baby quilts, I usually stitch 3 rows either up and down or across the quilt, then stitch around the inside of the border. It works well and they stand up well for frequent washing.
