Looking for Date Cookie recipe
 

I usually buy chopped dates in a box that has a cookie recipe on the back. Today I went to the store and they had dates in a bag and no recipe. I haven't made these cookies for a long time so I've forgotten the recipe. Do any of you have a good date cookie recipe?

Well you may be in luck. I just bought a box of dates with a cookie recipe. I hope it's the one your looking for.
Double date delight oatmeal cookie.
2sticks of butter. 1 1/2 cups all purpose flour
1 cup packed brown sugar. 1 tsp baking soda
1/2 cup granulated sugar. 1 tsp cinnamon
1 tsp vanilla. 3 cups quick oats
2 eggs 2 8 oz packs Amport chopped dates


Cream butter and both sugars together. Then add eggs and vanilla, combine well. Add flour, baking soda, and cinnamon and combine. Finally add quick oats and Dates and mix together. Use a tsp to drop batter into ungreased cookie sheet. Bake for 11 - 12 minutes at 350 or until golden brown. Makes 4 dzn.

Pillows or Date-nut Cookies (Aunt Ruth)

cream
½ cup shorting
1 cup sugar
2 eggs

Add
1 teaspoon vanilla
Beat until fluffy.

Mix
3 ½ cup flour (lil by lil with milk)
1 teaspoon soda
½ teaspoon salt
½ cup milk
Fresh nutmeg at least 1 teaspoon

1. this is good- I chill the dough
2. must use more flour when you mix and more flour on your hands when rolling them out.
3. I use drinking glass or biscuit cutter to cut them out.

Date-nut filling

8 oz. box of pitted dates (chopped)
½ cup sugar
2 Tablespoon flour
¾ cup water
In sauce pan

¾ cup chopped walnut. (not ground)

1. add a good Tablespoon dates each cookie.

Bake 375° f just until (light golden brown)

My mom used to make a date cookie that was like a sandwich. Cookie dough, date mixture and more dough then bake. I found this to taste the same and be much easier.

Date Bars

Date Filling: 8 oz box of chopped dates, 1/2 C water, 1 Tbl. lemon juice, 1 Tbl.butter
Cook dates, sugar & water together until thick, stirring frequently. Blend in lemon juice and butter. Cool

Cookie Dough: 1 box Butter Pecan Cake Mix, 1/2 C butter-softened, 1 egg
Preheat oven to 350. Stir dry cake mix, butter & egg in lrg. bowl. Press 1/2 mixture(I use a little more than 1/2) into ungreased 9x13 pan. Bake 10 min. Pour date mixture over crust. Sprinkle with remaining cake mix mixture. Bake 20-25 min. or until light golden brown. Cool completely, about 1 hour before cutting.

I had to take these away from our pastor.lol Dates seem to comes in a lot of different sizes. I have used any size in this recipe. A couple oz doesn't seem to make a difference. Hope you enjoy these as much as I do.

Date Nut Balls or Skillet Cookies Ingredients: 1 stick butter, 2 beaten eggs, 1 cup sugar, 1 cup chopped dates, 1 cup chopped pecans, 1 tsp. vanilla, 2 cups Rice Krispies, Coconut Directions: 1. Melt butter in skillet; add beaten eggs, sugar and dates. 2. Cook over low heat until thickened, about 10 minutes. 3. Slowly mash dates while cooking. 4. Turn off heat. 5. Add pecans, vanilla and Rice Krispies. 6. While warm, roll and shape into small balls. 6. Roll in coconut. 7. Place on waxed paper. 8. Keep hands moist while rolling. 10. Store in refrigerator in airtight container.

These are delicious.

I have one called Hedgehogs. They have chopped dates, nuts, coconut, brown sugar, and eggs. They are rolled like little logs and rolled in coconut before the are baked. Very good. Look like hedgehogs, thus the name. If you're interested. let me know; and I'll post it. I make them every year for Christmas.

This is one of my FAVORITE cookies.


CRUNCHY DATE ROUNDS

1/2 cup butter
1/2 cup sugar
1/4 cup brown sugar
1 egg
1 tsp. vanilla
1 cup flour
1/2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/2 cup chopped walnuts
1 cup snipped pitted dates
1 1/2 cup sugar cereal flakes coarsely crushed (Frosted Flakes) which equals 1/2 cup crushed (I use more)

Combine butter, sugars, egg, and vanilla. Beat well. Sift together flour, baking powder, soda and salt. Gradually add to creamed mixture, blending well.
Stir in nuts and dates. Drop from tsp into cereal flakes, rolling to coat well.
Bake 2" apart on ungreased cookie sheet at 375 degrees for 10-12 min. or until top springs back when lightly touched.
