Pudding For Breakfast
 
I was tired of the same old breakfasts and I was craving coconut pudding, so...why not pudding for breakfast? It has eggs, milk, a little sugar, a little cornstarch...all of which are typical ingredients for a breakfast meal.

I made coconut pudding, but the possibilities are endless. You could do banana, peanut butter, chocolate, plain custard, strawberry...the list goes on and on. The coconut pudding was so yummy and satisfying. I served it lukewarm with a variety of fresh berries on top. It was just divine! It tasted like something that they would serve in a fancy hotel.

I don't have an exact recipe, but here are a list of ingredients that I used:
1 can Low-fat coconut milk
4 egg yolks
about 1/2 cup of sugar
about 2 T cornstarch
a splash of vanilla
about 1/4 t salt
about 3/4 cup of dried, grated coconut
1/2 cup almond milk to thin it down a little

There are a gazillion recipes online for pudding, so I'm not going to go through the whole procedure here. My only tip is to make sure that you stir in a few tablespoons of the hot mixture into the egg yolks to warm them up and prevent them from curdling in the pudding.

Sounds good. Along those lines I make an overnight oatmeal which is eaten cold and to me is pudding like with more texture.

This morning I had plain Greek yogurt with thawed blueberries and sweet cherries in it. It is sort of pudding like!

I hated breakfast growing up and Mother worried sending me to school without eating. I loved canned Chicken Noodle soup so I ate that a lot.

Over the past year I've been really trying to mix up my breakfasts. It takes some effort to not just make the same old thing. This is a great idea!

That's a great idea! Tranum, I also hated breakfast, growing up (something about eating, brushing my teeth and then getting on a lurching old school bus for an hour just did not sit well with my stomach). I resorted to milk shakes. Hey next best thing to pudding for breakfast is ice cream!! :D

I'm gonna try some peanut butter powder with almond milk for my next pudding.
