Since a lot of us are at the point of too many zucchini, I thought I would share a couple of recipes. My co-worker found both of these on Allrecipes.com . Both are good. Enjoy. :)

Zucchini Brownies

1/2 C. veg oil
1 1/2 C. white sugar
2 tsp. vanilla
2 C. flour
1/2 C. cocoa pwdr
1 tsp salt
2 C. shredded zucchini
1/2 C. chopped nuts (walnuts, or pecans)

Mix oil, sugar and vanilla until well blended. Combine flour, cocoa, B.S., and salt. Add to the oil mixture. (Mixture will be fairly dry). Add zucchini and nuts. Spread in a greased and floured 9X13 pan.
Bake @ 350°F for 25 to 30 minutes.

Can be iced, but really doesn't need it.


Zucchini Crisp

8 C. cubed, peeled zucchini
1/2 C lemon juice
1/2 C sugar
2 tsp. ground cinnamon
1 tsp. ground nutmeg

Topping:
1 1/3 C. br. sugar
1 C. old fashioned oats
1 C. Flour
2/3 C butter or marg.

In a bowl, combine zucchini, juice, sugar, spices, and mix well. Pour into a 9X13 baking dish.

For topping, combine all ingred. and cut in butter/marg with pastry cutter until crumbly. Sprinkle over zucchini mixture.

Bake @ 375°F for 45 to 50 minutes or until bubbly and zucchini is tender.

We eat them as a vegetable not as a sweet LOL, same with pumpkin. I love looking at recipes from around the world. :)

I like to dice squash & add to my beef/veggie soup.Most ppl never notice it's in there.DD sautes zucchini /squash with onion,garlic & green/red peppers for a side dish.

Another favourite way we like it....slice a larger zucchini into 1/2" slices, (about 3" diameter zuke). Sprinkle one side with Lawry's seasoned salt, grill over campfire.

I have tried it on the BBQ, but isn't the same. Really need the campfire. ;)

Here is another recipe that you can use squash or green tomatoes that I found on line. It's really good.
OVEN FRIED GREEN TOMATOES



Baked "Fried" Green Tomatoes or Squash

1/2 c. cornmeal
1/2 tsp. salt
1/4 tsp. pepper
1 egg
1 tbsp. water
3 med. green tomatoes
Vegetable cooking spray

Combine meal, salt, pepper and set aside. Combine egg and water; beat well. Dip tomatoes in water mixture, dredge in cornmeal. Lightly coat a 15"x10"x1" baking pan with spray. Place tomatoes in a single layer on pan. Bake at 450 degrees for 30 to 40 minutes or until golden brown turning once. Yield: 6 servings about 64 calories per serving. NOTE: Yellow squash may be substituted.

Chocolate and zucchini, heaven. I am so depressed at this topic. My favorite veggie is zucchini, and I don't know any one who grows it anymore...No room in my yard. :oops:

I add all these things to my spaghetti sauce. Even my son who hates vegetables ate three servings!

How much baking soda in the Zucchini Brownies? B.S. mentioned in directions but not included in ingredients.
