Default Aunt Edith's Recipes

I didn't get any recipes to try for the dinner with my brother and his family so I decided to make things we used to eat as kids. It was a big hit. The Russian sister-in-law begged for the second recipe. I thought I would share a couple of the recipes with you...

Aunt Edith’s Hot Dog Chili

5 pounds HAMBURGER
3 large ONIONS, diced
5 tablespoons CHILI POWDER (McCormick Hot Mexican)
1-1/2 tablespoons RED CAYENNE PEPPER
1 tablespoon GARLIC POWDER
1 tablespoon OREGANO
1 teaspoon ALLSPICE
SALT & PEPPER to taste
1 (6 ounce) can TOMATO PASTE
2 cups TOMATO JUICE
Lots of WATER as it cooks

Brown hamburger and onions in a large pot – Drain fat – Break up the hamburger mixture with a potato masher - Add remaining ingredients – Stir well – Periodically stir as it cooks for at least three hours – Do not cover – Put in serving-size containers in the freezer until ready to use.

The smell of this recipe cooking is almost as good as eating it. It is also a good topping for baked potatoes, macaroni, etc.


Aunt Edith’s <ST1Orange</ST1 Delite<O</O
<O</O
One large (6 oz.) package ORANGE JELLO (I use suger free)<O</O
One pound COTTAGE CHEESE<O</O
Two 11 oz. cans MANDARIN <st1:City><ST1ORANGES</ST1</st1:City>, drained<O</O
One 20 oz. can CRUSHED PINEAPPLE, drained<O</O
One 8 oz. container COOL WHIP, thawed
<O</O
½ cup chopped PECANS (optional)<O</O
<O</O
Mix the Jello with the cottage cheese until well blended. Fold in the remaining ingredients. Refrigerate.<O</O

Your dinner was a hit because it was comfort food and brought back memories to your brother. I'm glad your SIL like the salad. That one has always been a favorite of mine.

I know this is a silly question but do you make the "jello" or just use the dry powder?? thanks so much I think I will make this for an upcoming meeting of the local cemetery association

Use the dry jello just like it comes out of the package. It dissolves into the cottage cheese quickly.

I hope you enjoy this recipe as much as my family has over the decades. I've been giving leftover hotdog chili away and everyone loves it. I should make it more often.
