Sorry for the exuberant title but I tried a new frosting recipe today and it is GREAT! I usually go for buttercream icing on my cupcakes, but wanted to try something different, and came across this recipe on the web. It was easy to do, took ALOT of whisking but it was worth it, it is like heaven on your tongue, light and sweet but not sickly. I added a touch of food colouring to make it pink, but without it, it was pure, glossy frosty white. The cupcakes are for Lottie's birthday party tomorrow, the cushion and Ittby Bitty Kitty are wrapped and ready to go!

200 g white sugar
80 ml water
0.8 g cream of tartar
2 egg whites
5 ml vanilla extract

In a saucepan, stir together the sugar, water and cream of tartar. Cook over medium-high heat until the sugar is dissolved and the mixture is bubbly.
In a medium mixing bowl, whip the egg whites and vanilla to soft peaks. Gradually add the sugar mixture while whipping constantly until stiff peaks form, about 7 to 10 minutes. Frost the cake of your choice

Thanks Loretta, I did decorate them, I would LOVE to work in a bakery, I love making cakes. Nice to know the recipe is a traditional one. Seafoam is a good name for it, it is foamy and light.

My mom made the seafoam frosting too, but she used brown sugar. She would also take any leftovers and drop on wax paper in dollops for a candy. Sometimes she just made the candy. YUM! Seafoam is my fav.

could you add the US equivalents to the metric measurements?

sounds really good.

and the cupcakes are lovely - look good enough to eat!
