Banana Bran Muffins (Walnuts & cocoa Optional)
1 cup whole wheat flour
1 cup uncooked bran (or bran cereal)
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp cocoa (optional)
1/2 cup English walnuts (optional)
1/4 cup unsweetened applesauce
1/4 cup Honey
2 eggs
1/4 cup milk (soy milk can be substituted)

Mix dry ingredients into mixing bowl.
Stir to combine & make well in center.
Mash bananas & combine in applesauce.
Mix Honey, eggs, milk & blend in with banana mixture.
Pour into well, mix until moistened. Ignore lumps.

Fill greased muffin cups 3/4 full.
Bake 400 degrees F oven for 20 to 25 minutes.
108 calories per muffin. Enjoy! :roll:

That sounds like a very interesting recipe, Very healthy as well.

Sounds yummy! And I have bananas that need to be used. How many bananas for this recipe??? I don't see them listed. I'm a little hopeless in the kitchen! HELP!
