These are so simple even someone who doesn't really bake can make them. They are great for kids to make.
Raspberry Jam Cookies
2 1/4 c flour
1 c sugar
3/4 softened butter
1 egg
raspberry preserves or jam (or jam of you choice)
Heat oven to 350
Put flour, sugar, butter and egg in a large bowl. With your HANDS (no mixer used) mix all together until a dough forms. Roll dough into balls the size of a walnut. Put on an ungreased cookie sheet. In the center using your thumb press dough down to have an indentation. Fill the indentation with jam about 1/2 full. Bake 20-25 minutes or until golden brown.

I love thumbprint cookies! Those are my favorite Christmas cookie to make! We usually roll the dough into chopped nuts before we put the "thumbprint" in it. Major yummo! (first the dough balls are rolled into egg whites then into the nuts)
