MEXICAN FRUIT CAKE
I promised this recipe so here goes:

2 eggs
1 cup sugar
1 tsp. vanilla
2 cups flour
2 tsps. baking soda
1-20 ounce can of crushed pineapple(juice and all)
pinch of salt.
1/2 cup of pecans or walnuts-(your choice)
Mix all ingredients well. Put into 2- 9inch or one 9X13 baking pan that has been sprayed with cooking spray (pam). Bake at 350 degrees for about 35 minutes.

Icing
1-8 ounce package cream cheese-softened
1 stick oleo-softened
3 1/2 to 4 cups powdered sugar
1 tsp. vanilla
Beat well then add:
1/2 cup chopped nuts

Ice cake when completely cool. Enjoy!!!

This is similar to the recipe that I got from my MIL but not the same. I also add coconut. It's the easiest cake to make and great for taking to potluck lunches!

I think it cooks for about 50 minutes in a 13x9 pan. I made it for the annual family picnic at the end of July per my older sister's request! :-)
