Default Can you freeze or can fresh potatoes??

I don't remember anyone successfully canning or freezing fresh potatoes dug up from the garden...is there a way you know of??? Thanks for your suggestions or recipes.

There must be a way to can theme since you can buy them canned.

You can only can cooked- for the sterilization and expulsion of hot air. No problem freezing though- think of those uncooked fries you can buy? But why freeze? Potatoes keep for ages in a cool dry dark place....

Garden potatoes never seem to keep well...potatoes are sold frozen or in cans so there must be a way to do so. A friend has told me about her soup with potatoes in it. And how her SIL cans the small potatoes, so I may try that.

It is so easy to open a jar and use the contents quickly. I am going to try the Friend's recipe for soup. She packs layers of cabbage in the bottom, green beans, potatoes, celery, and onion filled with hot water, or beef broth or Chicken broth, can add tomato if desired and has instant winter soup for cold days. Add a jar of meat to the soup, and it will satisfy dh for a meal or two.

They can be canned. Handy to heat and mash. I'm not fond of them frozen. Fresh from the garden, they have a lot of moisture, and I find the texture unpleasant after freezing.

NinaSue, you are right about soup. I've canned veggie soup with potatoes in it. They seemed just fine when we ate the soup. Why not just potatoes? You are a genius! Why have I not thought of this?

The only experience I've had with freezing potatoes is when I freeze soup. When thawed and heated, the potatoes are mealy.

Perhaps commercially canned potatoes have preservatives added.

I do not like the texture of frozen potatoes. We make a lot of soup during the winter months but do not freeze soups containing potatoes. Never thought of canning but think it a better preservative.

Several weeks ago my grandson accidently put a 5 lb bag of potatoes into the freezer when carrying in the groceries. About three weeks later we "tried" to see if they would still be usable. To our surprise we were able to boil them and make mashed potatoes without any problems. I don't know what else you could use them for but I can vouch for the mashed potatoes. Take a few and freeze them then experiment.
