Cheesey Potatoe Soup

I was on the QB chat the other day and told a member I would get this recipe for her, so I decided to share it with everyone. I haven't made it, but I have ate it many, many times. It's my mom's recipe, and it is delicious!!!
4-5 med. size potatoes
1 onion
1/2 cup chopped raw carrots (she uses baby carrots)
Chop and Cook. (Becareful not to mush or scorch)
1 can cream of chicken soup
1 can chicken broth
8 ounces Velveeta Cheese
Mix these ingredients with the potatoes, carrots, and onion. Cook until the velveeta cheese has melted. (She puts hers in the crock pot and cooks on low for about an hour)
