Dice one large shallot finely
Cut one basket of cherry tomatoes in half
mince 2 garlic cloves

Saute shallot in 2 TBSP Olive Oil and 2 TBSP Butter
When shallot is transparant, add garlic and tomatoes
Saute until tomato is soft Splash with about 1/2 cup white wine
add shrimp and cook just until shrimp is opaque and red.

Serve with a fresh Spinach salad and you have a yummy easy company dinner
