Smile Easy Crock Pot Chicken

Layer four chicken thighs or breasts in crockpot. Pour 1 can cream of celery chicken soup over them. Cover and cook all day. Just pour over rice for a complete meal. Delicious.

Another twist ... put salsa on the chicken instead of the soup.
I often chop up some onions, peppers and/or mushrooms etc. (whatever I happen to have)to add with the salsa.

That sounds great! I make my own salsa sometimes so that would be simple to do. Thanks for your response.

You can do it that way in the crock or the oven. It doesn't take a lot of salsa. I just spread it over each piece and then the crock creates extra juice as it cooks.

If you want to dress it up a bit ... add some shredded cheese at the end. Delicious!!!


And another twist ... instead of salsa use antipasto, then top with feta at the end.


The leftovers for either are delicious cold or chopped and added to salads or of course, you can re-heat them.

Hope you and your family enjoy these easy ones as much as I do!! It's one of my favourites, so I can have supper cooking while I sew away!

Had the chicken thighs, no cream of celery soup. I did have cream of chicken so I put the thighs, the cream of chicken, two stalks of celery, half a pound of mushrooms and a little garlic in the crock pot. Now to go get the brown rice. Thanks.
