I make this and the muffins never last long, even fooled my brother in law who is a chef as to the mystery ingredient (pumpkin) that I used!

1- Spice Cake Mix or choice of other cake mix (white, chocolate, yellow your preference)

1 can or your canned pumpkin (will have to add spices if you use canned pumpkin)

Chocolate frosting

Optional: nuts, chocolate chips (mix in after adding the pumpkin !) or whatever you think might taste good !

Mix the ingredients as stated in your cake mix

Add the pumpkin mix thoroughly

Pour into muffin pans, let set for 3 minutes

Then put into oven at the heat the cake mix states and let bake
then frost after the cupcakes have cooled completely down.

Put them out and let them enjoy them! The in laws come over and the platter of 24 are gone within a matter of a couple of hours and its easy !! I have also frozen the muffins then brought them out later to defrost and added the frosting. Can use whatever type of frosting you like as well I use Chocolate just cuz ! Easy for sure !

Caswews, this sounds really good. Did you mean to say you can use either one can of pumpkin pie FILLING or one can of pumpkin?

You can use either this recipe is very forgiving and delicious-I have even used my own canned pumpkin to which I have added pumpkin spices and its delish!

I'm confused ... in your initial posting you say to mix ingredients as stated in your cake mix.

So you add a can of pumpkin to the cake mix after eggs, water? And what size is the can of pumpkin?
