Chocolate Texas Sheet Cake

1 cup water
1 cup butter or margarine (or 1/2 cup butter and 1/2 cup oil)
1/3 cup cocoa
2 cups sugar
2 cups flour
1 teaspoon soda
1/4 teaspoon salt
2 eggs
1/2 cup buttermilk
1 1/2 teaspoons vanilla
1 teaspoon cinnamon, optional but very good

1. Mix together water, butter and cocoa, microwave 3 minutes. Set aside.
2. In mixing bowl add remaining dry ingredients
3. Stir hot chocolate mixture into dry ingredients
4. Add eggs, buttermilk and vanilla
5. Pour in 13 x 9 inch baking pan (that has been sprayed with Pam
6. Bake at 350 degrees for 30-40 minutes. Frost with Chocolate Texas Sheet Cake frosting:

1/4 cup butter or margarine
3 tablespoons cocoa
3 tablespoons buttermilk or milk
2 1/2 cups powdered sugar
1 teaspoon vanilla
3/4 cup pecans, chopped, opitional
1 cup coconut, optional

1. Combine butter, cocoa and buttermilk or milk, microwave for 2 minutes.
2. Add vanilla and powdered sugar. Beat until smooth.
3. Add pecans and coconut if desired.
4. Spread on cake while hot.

This cake is even better the next day.

Weed,
This is one of my favorite cakes to take to potlucks. It's always a hit. Sometimes I put 1/4 cup of peanut butter in the frosting. Thanks for posting. Enjoy, y'all.
